Peanut fried chicken wrap

I was craving fried chicken, but I did not want to go the old way of deep frying with flour coating not did I want to use cornflakes to coat my chicken, so I came up with this idea of making a crunchy peanut fried chicken wrap! Oh Girl, this wrap was so delicious and it hit the spot instantly.

The more I understand and learn about the ingredients that go into the store bought food, the more I want to cook my food at home from scratch. Also after having gone through a few health issue in the last year, cooking food at home is my way to go forward. Now let’s not waste much time and get straight into making this wholesome crunchy peanut fried chicken wrap!

THE FRIED CHICKEN

In a large bowl, add your chicken tenders along with butter milk, egg and some spices. Marinate it for a couple of hours at least, but I highly recommend overnight marination.

Roast some peanuts, remove the skin off and crush them in a food processor. You can also get the crushed peanuts from store if you want to save time or go ahead and use crushed cornflakes. Spice your crushed peanuts with the same seasoning you added to marinate the chicken.

Once the chicken is marinated, coat it with plain flour, then dip it in egg mixture and finally coat it with the peanut mixture. Spray some oil on the coated chicken and air fry at 190 Degree Celsius for about 20 to 25 minutes, by flipping sides half way through.

THE HOT SAUCE

For the hot sauce chop some red peppers, add them in a pot along with some red chillies and garlic. Add water and let it boil for 8 to 10 minutes. Allow it to cool down, then blend it in a blender until its smooth. Strain the mixture in the same pot, add some butter and jaggery( you can add brown sugar as well) and boil again for 6 to 8 minutes. If you feel the consistency is too thin, go ahead and add some corn starch to thicken it a bit. Your home made hot sauce is ready!

THE YOGURT SAUCE

For the yogurt sauce, in a bowl add 1 cup thick yogurt along with some garlic powder, pepper powder, salt and some dried parsley. Mix everything until combined and the yogurt sauce is ready to use!

ASSEMBLING THE PEANUT FRIED CHICKEN WRAP

You need a wrap to assemble, I chose to use home made roti but you can go ahead and use any wrap of your choice. Place a lettuce on the wrap, coat the fried chicken with some hot sauce and place it on top of the lettuce. Drizzle lots of yogurt sauce on top of your chicken, this helps in balancing the spice level. Wrap it up and enjoy!

A FEW TIPS

  • If you don’t want to strain yourself by roasting and crushing the peanuts, go ahead and use crushed cornflakes instead. Air frying time and temperature remains the same.
  • Instead of the air fryer you can also bake this oven.
  • Again if you don’t want to make hot sauce from scratch, use a store bought one instead.
  • I used home made roti as a wrap, but you can use anything you have in hand, pita bread or any flat bread will work well.
  • You can also double coat the chicken with plain flour and spices and deep fry if you like to.
  • Toppings can vary, you can add cucumbers, olives, or any seasonal veggies to make this wrap more fun and nutritious.

Ingredients
  

PEANUT FRIED CHICKEN

  • 750 g Chicken Tenders
  • 200 ml Butter milk
  • 2 tbsp Garlic powder
  • 2 tbsp Red chilli powder
  • Salt
  • 2 tbsp Cumin powder
  • 2 tsp Pepper powder
  • 1 Egg
  • 150 g Roasted crushed peanuts
  • 1 cup Plain flour
  • 2 Beaten eggs seasoned with salt and red chilli powder

HOT SAUCE

  • 3 Long red marconi peppers
  • 4 Red chillies
  • 6 Cloves of garlic
  • 150 ml Water
  • 1/4 cup Butter
  • 1/4 Cup Jaggery or brown sugar
  • 2 tbsp Corn starch dissolved in water

YOGURT SAUCE

  • 1 Cup Thick Yogurt
  • 1 tbsp Garlic powder
  • 1/2 tsp Salt
  • 1/2 tsp Pepper powder
  • 1 tsp Dried parsley optional

OTHER INGREDIENTS

  • Wraps or homemade roti
  • Oil spray
  • Lettuce

Instructions
 

PEANUT FRIED CHICKEN

  • Marinate the chicken tenders with butter milk, salt, 1 tbsp red chilli powder, 1 tbsp garlic powder, 1 tbsp cumin powder, 1 tsp pepper powder and egg for at least 2 hours, preferably overnight.
  • Roast the peanuts in oven or on a pan, rub with a kitchen towel and remove the skin. Crush in a food processor, and then season it with 1 tbsp red chilli powder, 1 tbsp garlic powder, 1 tbsp cumin powder, 1 tsp pepper powder and salt.
  • Beat two eggs in a bowl and season with salt and red chilli powder.
  • Coat the marinated chicken, first in some plain flour, then in the egg mixture and finally with the peanut mixture.
  • Place the coated chicken in the air fryer basket, spray it with some oil and air fry at 190 degree celsius for 20 to 25 minutes. Make sure to flip sides half way through.

HOT SAUCE

  • Boil red peppers, red chillies, garlic, salt and water together for 10 to 15 minutes and let it cool down completely. Once cool blend in a mixer jar until its smooth.
  • Strain the mixture, add jaggery or brown sugar along with butter and cook until it comes to a boil.
  • If you feel the consistency is too thin, go ahead and add some corn starch to thicken it a bit.

YOGURT SAUCE

  • In a bowl add yogurt, garlic powder, pepper powder and salt. Mix everything until well combined.

ASSEMBLING

  • Take a wrap of your choice( I used home made roti), add a lettuce, add peanut fried chicken tender, pour some hot sauce and some yogurt sauce. Wrap it up and enjoy.
