Butter chicken skewers has got its inspiration from the authentic Indian butter chicken gravy. As I love butter chicken and the whole world goes crazy for butter chicken it was only fair that I tested this recipe for the skewers and trust me it turned out to be amazing. This recipe is made by marinating boneless chicken pieces with some spices, cream, butter and cashew paste and then grilled to perfection. They are so buttery and tasty that you will fall in love with this and probably make this over and over again. Serve with some rice and sauce and you will have an amazing dinner/lunch or just serve it as a starter especially when you have guests around and they sure will be impressed.

INGREDIENTS YOU WILL NEED:

  • 1 kg boneless chicken
  • Salt to taste
  • 1.5 tsp red chilli powder
  • 1.5 tsp ginger garlic paste
  • Juice of 1 whole lemon
  • 1.5 tsp onion powder
  • 3 tsp cashew paste
  • 50 ml cream (single or double)
  • 3 tsp tomato paste
  • 50 ml melted butter
  • 2 tsp kasuri methi
  • A piece of charcoal
  • 10-12 bamboo skewers

MARINATING THE BUTTER CHICKEN SKEWERS

In a bowl add boneless chicken ( I used thighs but you can also use breast) and all of the spices ( salt, red chilli powder, onion powder) along with rest of the ingredients like cream, butter, cashew paste, ginger garlic paste, lemon juice, tomato paste and kasuri methi. Mix everything well and let it marinate for 2 hours. However overnight marination works best so if you have enough time let it sit in the refrigerator overnight. Afterwards heat a piece of charcoal and place it in the marination bowl with the help of aluminium foil. Add a few drops of oil and when it starts to smoke close the lid for about 15 minutes. This helps the smoky flavour to get induced into the chicken.

THREADING THE SKEWERS

The next step after the marination is to thread the skewers. If you are using bamboo skewers make sure you soak it in cold water for 30 minutes. This helps prevent the bamboo skewers from burning. Now thread the marinated chicken pieces onto the skewers. If you are using large skewers you can thread 8 to 10 pieces but if you are using mini skewers just thread about 4 to 5 pieces of chicken.

AIR FRYING THE BUTTER CHICKEN SKEWERS

You can definitely grill this on a grilling pan but I would like to do this in the air fryer. I personally like to line the air fryer basket with a baking paper so that the juices stay intact and the chicken does not dry up. Place the skewers in the air fryer basket and set the temperature to 185 degrees celsius and the timer to 25 minutes, cook each side for about 12 minutes. Once they are done remove them out of the air fryer and serve hot with some rice or just as a starter with your favourite dip and that’s basically it.

ALTERNATIVE TO AIR FRYING

If you do not have an air fryer you can still make butter chicken skewers. You can grill this on a grilling pan, bbq or bake it in the oven. The rest of the process remains the same.

HOW TO STORE BUTTER CHICKEN SKEWERS

After applying the marinade to the chicken just store it in ziplock bags and freeze it in the refrigerator. When you are ready to cook remove it out of the freezer 12 hours in advance and thaw it. Then skewer and cook as usual. This stays good in the freezer for about a month.

Instructions

Place the skewers in the air fryer. Set the temperature to 185 degrees Celsius and time to 25 minutes. Each side should be cooked for about 12 minutes.

Once done take it out of the air fryer and serve warm along with some rice, roti/naan or just as a starter and enjoy!
