KEEMA CHEESE NAAN

Keema cheese naan

These are no ordinary naan, these are keema cheese naan. The soft naan dough is rolled and filled with spicy keema and cheese filling. Keema is nothing but minced meat cooked with lots of spices. Naan is usually cooked on tandoor but since we don’t have one at home we will cook this straight away on the pan or tawa. Once they are cooked to perfection, they are generously brushed with some garlic butter. Serve them warm just as it is, they are simply delicious!

Chicken bread rolls

Chicken bread rolls are soft bread rolls stuffed with a spicy chicken filling. I got the inspiration to make this from a bakery that was behind my college when I was doing my Engineering. This bakery would make the most delicious buns that were stuffed with aloo( potato) filling. I remember back then the first class would start at 7.30 A.M and I would go to the class without having breakfast most of the days because I literally had no time for it. We would then have a break at 11.30 and I would go with my friends to the bakery and have these delicious aloo buns and that would be our breakfast.

A few days ago I was remembering those days and that’s when I got the idea to make these buns but with some changes. Instead of the aloo filling I will be adding a spicy chicken filling and some cheese because I love cheese!

Today we are making zaatar chicken and potatoes. ZA’ATAR is a popular Middle Eastern spice blend. It is a combination of thyme, roasted sesame seeds, salt and it also has sumac added to it. This recipe is very simple and all you need is a few spices along with zaatar, some diced potatoes, and chicken. It takes a couple of minutes to prepare the marinade and then you throw the chicken and potatoes into the baking dish, rub the marinade to the chicken and potatoes and throw it into the oven to bake. That’s it, pretty simple right!

BAKLAVA

Baklava is a very famous Turkish dessert made up of filo pastry. It is filled with crushed nuts and baked to perfection. The crispy baklava is then sweetened by pouring some flavoured sugar syrup over it.

Making filo pastry is a bit complex and making baklava from scratch can be quite intimidating for many. Even I can’t think of making filo sheets from scratch, but if you are using store bought filo sheets then making this yummiest dessert is a child’s play. I am all about simplicity so I am using store bought filo sheets to make this dessert. The best thing about baklava is you can make this ahead of time. It tastes even better the next day and you can eat throughout the week as well. It stays good in the refrigerator for at least a week. So if you have guest coming over then plan and make this dessert ahead of time and you are all sorted!

TANDOORI CHICKEN

Tandoori chicken is a very famous Indian dish, where chicken is basically marinated with a whole bunch of spices and yogurt and then grilled in a Tandoor to perfection. Tandoor is a large oven usually made up of clay and heat is produced from hot charcoal and that kind of adds a smoky flavour to the food when cooked in a tandoor. Since we do not have tandoor at home we will make this in an air fryer, the air fryer comes with a grill mode that gives perfect charred texture to the chicken.

We will also smoke the marinated chicken with a piece of charcoal for that smoky flavour. Wondering what to do if you do not have an air fryer? Don’t worry I will be sharing tips on how to make it without air fryer. Serve tandoori chicken as a starter with mint chutney, lemon wedges and onions and it tastes delicious!
