Today we are going to be making jalapeno corn cheese samosa. These samosas are spicy, thanks to the jalapeños, but the cream cheese, cheddar and mozzarella balance out the flavours. Malai chicken

Malai Chicken is an amazing chicken recipe which originates from India. It is one of my favourites and go to recipes because it is so simple, comes together so easily and can make your taste buds dance.

The marinade for this is pretty simple, it’s just cream, yogurt and a bunch of spices mixed together and then the chicken is marinated for a few hours. It is usually cooked on grilled on charcoal, but since I love simplifying recipes I will be cooking this in the air fryer. Choose any method of cooking still this recipe will be a hit in your homes. It is usually served with naan, some chutney and a side of salad.

Aloo tikki simply translates to ‘Potato Patties’ and it is a very popular snack originating from Indian subcontinent. It is made with boiled and mashed potatoes along with some spices and then fried until it is golden and crispy. Since I love cheese, I like to stuff cheese in between to make these delicious and super cheesy aloo cheese tikki.

With Ramadan around the corner these are perfect snack for Iftar. Good thing you can also make and freeze them well in advance and fry just before the Iftar time. This saves a lot of your effort and you have an effortless snack in time for Iftar.

Fruit chaat is so famous during the month of Ramadan, I know we all make it every single day for Iftar and then forget it for the rest of the year. Ramadan is so close by and I can’t resist but share this creamy fruit chaat recipe. Creamy fruit chaat is made up of different types of fruits combined with cream, yogurt and chaat masala along with some nuts and raisins and served chilled.

To take this to another level I like to top this up with some vanilla ice cream, some date syrup and more nuts. So delicious!

CHICKEN CHEESE SPRING ROLLS

Chicken cheese spring rolls

Chicken cheese spring rolls are cheesy, crispy, spicy and full of flavour. They are perfect appetizer for Iftar during the month of Ramadan. I make this during the month of Ramadan every single year and they taste amazing. Boiled and shredded chicken is combined with some veggies, cream cheese, cheese, and some spices. It is then wrapped in the spring roll sheets and deep fried until golden and crispy. Then the chicken rolls are served hot with some ketchup or any dip of choice.

These spring rolls are freezer friendly that means you can make and freeze them well in advance and use it throughout the month of Ramadan. Don’t worry I will be sharing the tips on how to freeze in this blog.
