MAKING THE SAUCE

In a pan heat up some olive oil( or butter). Sear the lamb mince until 90 percent of the water released from the mince evaporates. Add chopped onion and minced garlic and cook until the onions are translucent. It takes 3 to 5 minutes for this. Then add all of the spices( paprika, salt, red chilli flakes, oregano, cumin powder) and cook for a couple of minutes. Add fresh tomato puree and some pasta water, simmer and cook the sauce for 20 minutes for the flavours to meld.

COOKING THE PASTA

Boil salted water in a large pot and cook the pasta of your choice according to the package instructions. Drain the water and keep the water aside, make sure to keep some pasta water for the sauce.

Once the sauce is ready add the cooked pasta, optionally some cheese, stir and cook for a couple of minutes so that the pasta absorbs some of the sauce. Taste and adjust the seasoning if necessary.

TIPS AND TRICKS:

  • If you have fresh oregano or basil, use it instead of the dried oregano for more vibrant flavour. I did not have any fresh herbs in hand so I used dried oregano.
  • I used fusilli pasta, but feel free to use any pasta shape. Penne, rigatoni or any pasta shape will work well with the lamb sauce.
  • You can add veggies like peppers, carrots for a more vibrant flavour and nutrition. It also looks pretty colourful. I did not add any veggies because I wanted it to be a quick and simple meal.
  • You cans start boiling the pasta and making the sauce simultaneously to save time, this way your pasta will be done in under 30 minutes.
  • I used lamb mince, but feel free to use any other mince of your choice. Beef mince will also work perfect with the sauce.
  • I added some cheddar cheese to make the sauce a bit thick, but you can totally skip it if you don’t like cheese or add more cheese if you want it to be cheesy.
