Lemon chicken tray bake

The lemon chicken tray bake is my version of the very famous Moroccan chicken Bake. All you need is just a few handfuls of ingredients to make this one-pan dinner. I make this very often and my whole family enjoys this delicious tray bake served with some warm naan or some crispy garlic bread.

Let me tell you this one is tangy and has so much flavour if done right . But if you mess it up it can be bitter and completely out of place . Don’t worry I will tell you how to make this perfect so that you can enjoy the tangy flavours of the chicken.

I always opt for easy one-pan dinner recipes and if you are someone like me you will love this incredible and easy lemon pepper chicken tray bake. I like to bake potatoes along with the chicken because my children love potatoes , but you can be creative and add any vegetables based on your preferences and this will still taste amazing

Ingredients needed to make Lemon Chicken Tray Bake

  • Chicken legs 5-6
  • Potatoes ( baby potatoes cut into half or normal potatoes cut into quarters)
  • Olive oil 1/4 cup
  • Salt to taste
  • Onion powder 1 tsp
  • Cumin powder 1 tsp
  • Turmeric 1/2 tsp
  • Pepper powder 1 tsp
  • Paprika 1 tsp
  • Garlic Powder 1 tsp or chopped fresh garlic
  • Zafran / Saffron ( a few strands )
  • Yogurt 2-3 tsp
  • Chopped coriander ( handful)
  • Preserved Lemon slices

How to marinate the chicken?

In a bowl add olive oil , salt , onion powder , cumin powder , turmeric , pepper powder , paprika , garlic powder ( or chopped garlic), zafran , yogurt , chopped coriander and mix everything together . Now add the Chicken legs into the marinade and rub until its all evenly coated . Make sure to reserve some of the marinade for the potatoes . Let the chicken marinate for about 2 hours or even more if you have time for best flavours .

How to spice up the potatoes ?

Cut the baby potatoes into half or if you using the normal potatoes then cut them into quarters. Spread the potatoes into a baking tray and then add the reserved marinade and rub all over the potatoes.

How to bake the chicken?

Once you have layered the potatoes in a baking tray, add preserved lemons and then place the marinated chicken on top of it. Bake in a preheated oven at 200 degrees Celcius for about 50 minutes. Grill for about 5 minutes in the end for it to be more crispy, every oven performs differently so keep an eye on it to avoid burning.

Tips and Tricks

Always make sure to use preserved lemons, not the regular lemon slices to avoid the bitter taste. You can get this in any super markets or the middle eastern stores.

I usually serve this with some warm naan or some crispy garlic bread.

Instructions

Apply the marinade to the chicken and marinate it for a couple of hours. Reserve some marinade for the potatoes.

Preheat the oven to 200 degree celcius.

In a large baking tray add the potatoes and season with the reserved marinade.

Add preserved lemons , marinated chicken and bake for about 50 minutes until the chicken is completely cooked , grill in the end for about 5 minutes for it to be more crispy.

Once the chicken is out of the oven add more preserved lemons and serve with naan or garlic bread
