Scrambled egg paratha wrap

Scrambled egg paratha wrap is all you need on a busy day, when you want to eat delicious meal but have very less time. This recipe needs only 30 minutes! We make delicious scrambled eggs and use the ready made frozen parathas, wrap the scrambled eggs inside the paratha and air fry to perfection.

This recipe is weeknight friendly and the best part is this recipe is also kids friendly. Serve this with some imli sauce or chutney for a more delicious flavour!

INGREDIENTS YOU WILL NEED:

  • 3 tbsp oil
  • 2 large chopped onions
  • 2 chopped tomatoes
  • 1/2 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste
  • 1 tsp red chilli powder
  • 4-5 eggs
  • Handful of chopped coriander
  • A packet of frozen parathas
  • Cheese( cheddar or mozzarella) – Optional
  • Tahini – optional
  • Imli sauce( Tamarind sauce) – Optional
  • Egg wash
  • Seeds ( Sesame, sunflower etc)

MAKING SCRAMBLED EGGS

In a pan heat oil and sauté the chopped onions . Introduce the chopped tomatoes once the onions are tender. Add all of the spices turmeric, coriander powder, cumin powder, salt and red chilli powder. Give it a nice mix and cook until the tomatoes soften. Crack 4-5 eggs and mix. Mix regularly until you have the desired consistency and texture of the scrambled eggs. I personally do not like soggy scrambled eggs so I like my eggs to cook completely. Garnish with some freshly chopped coriander leaves and mix well.

MAKING SCRAMBLED EGG PARATHA WRAP

You need some frozen parathas to make this recipe. You can easily find frozen parathas in the South Asian section of any super market. If do not want to use frozen parathas you can knead the dough and make it at home and use it for this recipe. Take two scoops of the scrambled egg mixture and place it on one side of the paratha. Grate some cheese if you like. I would also like to drizzle some tahini and imli sauce. Join the edges of the paratha and seal them. Egg wash and sprinkle any seeds you have at home( sesame, sunflower etc).

AIR FRYING SCRAMBLED EGG PARATHA WRAP

Place the sealed paratha in an air fryer. Air fry at 185 Degree Celsius for about 15 to 20 minutes. Make sure you flip the sides in between, this makes both sides to cook evenly. Enjoy just as it is or with some imli sauce. You can also bake this in the oven and the settings remain the same.

You wanna take a frozen paratha sheet, add two scoops of the scrambled egg mixture. Grate some cheese and drizzle some tahini and imli sauce for extra flavour. Join the edges of the paratha and seal them. Egg wash and sprinkle any seeds you have at home( sesame, sunflower etc).

Air fry at 185 Degree Celsius for about 15 to 20 minutes. Make sure you flip the sides in between and enjoy just as it is or with some imli sauce.
