ZAATAR CHICKEN AND POTATOES

Today we are making zaatar chicken and potatoes. ZA’ATAR is a popular Middle Eastern spice blend. It is a combination of thyme, roasted sesame seeds, salt and it also has sumac added to it. This recipe is very simple and all you need is a few spices along with zaatar, some diced potatoes, and chicken. It takes a couple of minutes to prepare the marinade and then you throw the chicken and potatoes into the baking dish, rub the marinade to the chicken and potatoes and throw it into the oven to bake. That’s it, pretty simple right!

INGREDIENTS YOU WILL NEED:

  • 6 chicken legs( drumsticks)
  • 2 -3 large diced potatoes
  • 3 tbsp zaatar
  • 1.5 tsp sumac
  • 1 tsp baharat( 7 spice)
  • salt to taste
  • 1 tsp paprika
  • 1/4 cup olive oil

PREPARING THE MARINADE

In a bowl, add 1/4 cup olive oil, zaatar, sumac, baharat( 7 spice), paprika, salt and mix everything. That’s it, the marinade is ready.

  • ZA’ATAR : ZA’ATAR is a popular Middle Eastern spice blend. It is a combination of thyme, roasted sesame seeds, salt and it also has sumac added to it. You can buy this spice blend from any Middle Eastern stores or from any supermarket near you.
  • SUMAC : Sumac is a tangy, slightly sour, crimson red spice that is popular in Middle East. It gives an amazing citrus and tangy flavour to your dishes. You can find this in any super market.
  • BAHARAT : Baharat is alternatively called 7- spice. It is a popular spice mix in Turkey and Middle East. It is usually a blend of different spices and differs from area to area. You can buy this in any Middle Eastern/Turkish stores or in any super markets.
  • PAPRIKA : Paprika is a spice mix made from ground pepper and you can easily buy this in any store.
  • OLIVE OIL : We all know olive oil and when we make Middle Eastern dishes it’s a must. So use good quality olive oil.

SEASONING CHICKEN AND POTATOES

Take a baking dish and layer diced potatoes all over the baking dish and place the chicken legs over the potatoes. Pour the za’atar marinade into the baking dish and rub all over the chicken and potatoes. Let that rest on the chicken counter for about 15 to 30 minutes.

BAKING ZAATAR CHICKEN AND POTATOES

Pre-heat the oven to 250 degree celsius for 15 minutes. Place the baking dish in the oven and bake for about 40 to 50 minute. Now we broil it for 5 to 8 minutes on the highest temperature, you will have a beautifully roasted za’atar chicken and potato dish to enjoy!

Notes

Every oven behaves differently so keep an eye to avoid burning.
