Today we are making chicken burgers, and yes we will be making the burger buns from scratch for this recipe. I have been thinking of making my own bread at home for a year now. The store bought bread is filled with chemicals and preservatives and I wanted to start eating clean. I slowly started replacing a lot of store bought things by making them at home. And making bread at home was something I have procrastinated for a while, but finally I have made it and you can too. Making bread isn’t a complicated process, in fact it is pretty easy.
We are not just making burger buns here, but we are going to be turning these into delicious fried chicken burgers. I even made mayo at home, as I hate using the store bought mayo. I am gonna show you everything step by step in this blog. Now without wasting any more time, let’s dive in!
INGREDIENTS TO MAKE BURGER BUNS
- 2.5 cups flour
- 7g instant fast action yeast( 1 sachet)
- 2 tsp sugar
- 1 tsp salt
- 1 large egg
- 2/3 cup milk ( 1/2 cup + 2 tbsp + 2 tsp)
- 1/4 melted butter
- 1 egg mixed with 1 tsp milk ( for egg wash)
- Sesame seeds
INGREDIENTS TO MAKE FRIED CHICKEN
- 750g chicken thighs
- 200ml butter milk
- 1+1 tsp paprika
- 1+1 tsp salt
- 1+1 tsp pepper powder
- 1+1 tsp red chilli powder
- 1+1 tsp ginger powder
- 1+1 tsp garlic powder
- 2 cups plain flour
- 1/4 cup corn flour
MAYONNAISE INGREDIENTS
- 1 large egg
- 3/4 cup avocado oil
- salt
- pepper powder
- Juice of half lemon
- 1/2 tsp mustard
- 1 tsp vinegar
SALAD INGREDIENTS
- Chopped lettuce
- Sliced onions
- Sliced cucumbers
- 1 tsp mayonnaise
- salt
- 2 tsp lemon juice
- 1/4 tsp red chilli powder
OTHER INGREDIENTS
- Cheese slices
- Oil for deep frying
- 2 tsp butter ( for toasting the buns)
MAKING THE BURGER BUNS
In a bowl, add the flour, yeast, sugar and salt. With the help of a spoon mix these dry ingredients well. Add one large egg, butter, milk and mix the dough roughly with the help of a spatula. Dust some flour on a clean working space and knead the dough, really well for about 8 to 10 minutes. Cover it with a damp kitchen towel and place in a warm place for 2 hours to rest. It should double in size in about 2 hours.
After 2 hours, when the dough has doubled in size, divide the dough into 9 equal parts. Take each dough ball and roll in between your palms, to shape them into a bun. Place the shaped dough balls in a baking tray lined with parchment paper. Make sure to keep a bit of a distance between them as we don’t want them to be toughing like the dinner rolls. Cover the dough balls with a kitchen towel and let them rest in a warm place for the second time, for about 30 minutes.
Pre-heat the oven to 175 degree celsius in the last 20 minutes while the dough is resting.
Once the dough balls have risen for the second time, egg wash them generously, sprinkle some sesame or black seeds and bake at 175 degree celsius for about 15 to 20 minutes. Once the burger buns are out of the oven, let them cool and then cut into halves through the centre. Toast the cut open sides on a pan with some butter for about 1 to 2 minutes. The burger buns are ready to assemble.
MARINATING AND FRYING THE CHICKEN
In a bowl add chicken thighs along with butter milk, and all of the spices (1 tsp paprika, 1 tsp salt, 1 tsp pepper powder, 1 tsp red chilli powder, 1 tsp ginger powder, 1 tsp garlic powder) and let that marinate for 30 minutes to 1 hour.
In another bowl add 2 cups of plain flour, 1/4 cup corn flour along with the same spices(1 tsp paprika, 1 tsp salt, 1 tsp pepper powder, 1 tsp red chilli powder, 1 tsp ginger powder, 1 tsp garlic powder) and mix everything well. This will be your dry batter.
Once the chicken has marinated, coat each chicken thigh with the dry batter and deep fry until it is golden in colour. The chicken should be crispy from the outside and tender, and juicy from the inside.
MAKING MAYONNAISE
If you have an immerser blender that’s perfect for making mayo, but if you don’t have we will make this in a blender jar. In a mixer jar add one egg, salt, pepper, lemon juice, mustard and vinegar. Add 1/4th of 3/4 cup of avocado oil and pulse for a few second( don’t blend, but pulse for 8-10 seconds). Add half of the remaining oil and pulse again. At last add the remaining oil and pulse again. Oil needs to gradually added and not at once if you are making this in a mixer jar. At the end you should have a thick consistency of mayonnaise.
MAKING SALAD
In a bowl add chopped lettuce, sliced onions, cucumbers, mayo, salt, red chilli powder and lemon juice. Mix everything well and the salad is ready to be used to assemble the chicken burgers.
ASSEMBLING THE CHICKEN BURGER
Once you have cut the burger buns through the centre and toasted the cut open sides with some butter, the buns are ready to assemble. Apply generous amount of mayo on the bottom half of the burger bun. Place the fried chicken, and then place a slice of cheese. Melt the cheese if you like to, then add a generous amount of the prepared salad. Place the other half of the burger bun on top and enjoy your fresh, home made chicken burgers with your friends and family.

- Add one large egg, butter, milk and mix the dough roughly with the help of a spatula.
- Dust some flour on a clean working space and knead the dough, really well for about 8 to 10 minutes. You will know when the dough is done, it is smooth and no longer sticks to your fingers.
- Cover the dough with a damp kitchen towel and place in a warm place for 2 hours to rest. It should double in size in about 2 hours.
