In addition to its flavour, grilled chicken breast is a lean source of protein, making it an excellent choice for those looking to maintain a healthy diet. When cooked properly, it remains juicy and tender, offering a satisfying meal without excess fat or calories.

MARINATION
In a bowl add oil, yogurt, red chilli powder, cumin powder, sumac, thyme, parsley, ginger powder, garlic powder,salt and lemon juice. Mix everything well and set that aside.
You need two whole chicken breasts for this recipe. Slice the chicken breast from the centre into two thin slices. This way you will have 4 slices of chicken breast and they cook evenly and quickly. Pour the marinade over the chicken and massage it to evenly apply the marinade throughout the chicken slices. Let it marinate in the refrigerator for at least an hour before grilling. However if you have more time marinate overnight in the refrigerator as overnight marination works best.
GRILLING THE CHICKEN
Heat your grilling pan for about 5 to 8 minutes on a medium heat. Brush some oil on the pan and place the chicken breasts on the grill and cook for 6-7 minutes on one side without moving them, to achieve nice grill marks. Flip the chicken breasts and cook for an additional 6-7 minutes on the other side. Or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the centre.
HOW TO SERVE GRILLED CHICKEN BREAST?
Well I served it with a quinoa salad, grilled corn and some grilled pineapple. It was a perfect healthy lunch on a summer afternoon.
You can serve it with some flavoured rice and salad. It even goes well with a sandwich. The options are endless, do try what works for you. I am sure you will love it and so will your family!
Tips:
- For even cooking, pound the chicken breasts to an even thickness before marinating.
- If the chicken sticks to the grill, it’s not ready to be flipped. Wait another minute or two and try again.

- 1/2 tbsp cumin powder
- 1/2 tbsp red chilli powder
- 1/2 tbsp ginger powder
- 1/2 tbsp garlic powder
- 1/2 tbsp sumac
- 1 tsp thyme
- 1 tsp dried parsley
- 1/2 lemon juice
- 2 tbsp yogurt
- salt to taste
Instructions
Slice the chicken breast for even cooking
- Place your hand on top of the breast and carefully slice horizontally through the thickest part into two slices. This ensures even cooking.
MARINATION
- In a small bowl, combine the olive oil, cumin powder, ginger powder, garlic powder, red chilli powder, sumac, thyme, parsley, salt, yogurt and lemon juice. Mix well to create a marinade.
- Pour the marinade over the chicken, ensuring that the breasts are evenly coated.
- Refrigerate for at least 30 minutes to 2 hours, allowing the flavours to penetrate the chicken.
GRILLING
- Heat the grilling pan for about 5 to 8 minutes on a medium heat. Brush with some oil.
- Place the chicken breasts on the grill and cook for 6-7 minutes on one side without moving them, to achieve nice grill marks.
- Flip the chicken breasts and cook for an additional 6-7 minutes on the other side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the centre.
SERVING
- Remove the chicken from the grill and let it rest for 5 minutes before slicing. This helps the juices redistribute and keeps the chicken moist.
- Garnish with freshly chopped parsley and serve with salad or sandwiches.
