Place your hand on top of the breast and carefully slice horizontally through the thickest part into two slices. This ensures even cooking.
MARINATION
In a small bowl, combine the olive oil, cumin powder, ginger powder, garlic powder, red chilli powder, sumac, thyme, parsley, salt, yogurt and lemon juice. Mix well to create a marinade.
Pour the marinade over the chicken, ensuring that the breasts are evenly coated.
Refrigerate for at least 30 minutes to 2 hours, allowing the flavours to penetrate the chicken.
GRILLING
Heat the grilling pan for about 5 to 8 minutes on a medium heat. Brush with some oil.
Place the chicken breasts on the grill and cook for 6-7 minutes on one side without moving them, to achieve nice grill marks.
Flip the chicken breasts and cook for an additional 6-7 minutes on the other side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the centre.
SERVING
Remove the chicken from the grill and let it rest for 5 minutes before slicing. This helps the juices redistribute and keeps the chicken moist.
Garnish with freshly chopped parsley and serve with salad or sandwiches.
